This easy-to-make dessert not only tastes delicious but also looks beautiful. Just grab some croissants from your favorite cafe, whip up a few simple ingredients, and you’re all set. It’s a treat that is not too sweet, with the added freshness of strawberries making it even more delicious. Perfect for picnics with friends or any occasion.

INGREDIENTS

(note: this recipe make 4 strawberry cheesecake croissants)

FOR THE FILLING

  • 228g cream cheese
  • 55g granulated sugar
  • 60g heavy cream
  • 1 tsp vanilla extract

FOR ASSEMBLY

  • 4 fresh croissants from your favorites bakery
  • 6 strawberries, sliced
  • Powered sugar for dusting

FOR STRAWBERRY COMPOTE

  • 170g fresh strawberries
  • 35g granulated sugar
  • 1/2 tsp lemon juice

PROCESS

FOR STRAWBERRY COMPOTE

  1. Wash, hull, and chop the strawberries into small pieces.
  2. In a medium saucepan, combine the chopped strawberries, granulated sugar and lemon juice.
  3. Heat the saucepan over medium heat.
  4. Stir the mixture occasionally until the strawberries release their juices and the sugar dissolves. This should take about 4-5 minutes.
  5. Reduce the heat to low and let the mixture simmer for about 5 minutes, stirring occasionally. (you can use a wood spatula to mash the strawberry)
  6. The strawberries should become soft, and the liquid will thicken slightly.
  7. Remove the compote from the heat and let it cool to room temperature. (I cooled mine in the fridge and then moved on to make the cheesecake filling)

FOR THE FILLING

  1. In a large mixing bowl, beat the cream cheese until smooth and creamy using an electric mixer on medium speed.
  2. Gradually add the granulated sugar to the cream cheese, beating until fully incorporated.
  3. Add the vanilla extract and mix until combined.
  4. Add heavy cream and mix until its fluffy, about 10-15 seconds. .
  5. Refrigerate the cheesecake filling for at least 20 minutes before using it to fill croissants. This will help it firm up a bit and make it easier to pipe or spoon into the croissants.

FOR ASSEMBLY

  1. Cut the croissants in half lengthwise.
  2. Use a piping bag or spoon to fill the croissants with the chilled cheesecake filling.
  3. Add strawberry compote and topped with sliced fresh strawberries. Fold the croissants over, dusted with powdered sugar. Enjoy!
